Salt-and-Pepper Grilled Turkey

Straight from Martha Stewart herself, this Thanksgiving cornerstone is sure to impress loved ones from near and far. For this specific recipe, a charcoal grill is the best fit.

Ingredients:

  • 1/2 cup extra-virgin olive oil
  • 1/2 cup coarse salt
  • 2 tablespoons freshly ground pepper
  • 1 large fresh or thawed frozen turkey (about 22 pounds), rinsed and patted dry, neck and giblets reserved for Giblet Gravy

Instructions:

Create a paste by combining salt, oil and pepper, then run the paste over the outside of the turkey. Next, use kitchen twine to tie the legs together.

Put approximately 50 coals in the chimney starter and heat till the color is gray. Then, put a 9-by-13-inch disposable aluminum roasting pan in the middle of the over plan and place a cover over it. Begin to grill and add eight coals to each pile every 45 minutes. Do this until the meat reaches 165 degrees. This can be measured using a meat thermometer, which should be inserted into the thickest part of the thigh. Start to check the temperature after approximately three hours of cooking.

Depending on the size of the turkey, cooking may take approximately five hours. Lastly, use parchment-lined foil to tent the turkey and let it stand for 30 minutes. Enjoy!

Texas Thanksgiving Cornbread

This recipe comes from Texas by Texans and here’s a helpful hint, a cast iron skillet is a must!

Ingredients:

  • 1 ½ cups white cornmeal
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons shortening (like Crisco)
  • 1 ¾ cups buttermilk
  • 1 egg

Instructions:

Preheat oven to 400 degrees and let two tablespoons of shortening melt in the oven in an iron skillet. Mix dry ingredients together while this is happening.

Next, add the buttermilk and one egg to the dry mixture. Make sure to mix well, then pour the mixture into the melted shortening in a separate bowl. Next, mix using a whisk and pour into the iron skillet. Bake for approximately 30 minutes at 400 degrees.

Texas “Sheet” Pie

Time for a Texas style Thanksgiving dessert. Nothing completes a tasty Thanksgiving feast like a sweet, delicious piece of pie. Texas “sheet” pie to be exact!

Ingredients:

  • 1 cup sugar
  • 1 cup butter (softened)
  • 2 eggs
  • 1/4 teaspoons salt
  • 1/3 cups milk
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 cans pie filling (your choice)

Instructions:

First, place the butter and cream sugar into a mixing bowl, adding salt, eggs and milk. Next, mix the ingredients together. Then, add flour and blend. Add in baking soda and baking powder, mixing it all together.

Prep 1 to 1 ½ cups of pastry to save for later. Grease a 10 x 15-inch pan with sides. Place and pat down the rest of the pastry onto the pan and on the short sides. Next, pour the pie filling onto the pastry. Use extra pastry for stripes by rolling it out on flour and cutting into desired shapes, then placing on top of the pie.

Whisk the one egg for an egg wash. Use a pastry brush to dip into the egg and paint on all parts of the pastry that are visible. Bake time is 35 minutes. Bake temperature is 350 degrees.
